- 2 tomatoes.
- 1lb prawns- peeled.
- Oil, enough for frying.
- 1-2 tsp sambal base (depending on your heat tolerance).
- 1tsp soy sauce.
- 1tsp sugar.
- 2tsp lime juice.
- Salt and pepper to taste.
- 1 clove minced garlic.
- 1 clove minced shallots.
- 2 cm ginger.
Sliced tomatoes and blend in a blender/food processor with garlic and shallots. Set aside.
Heat frying oil in a pan, cook prawns for 5 min (until pink), set aside.
Use the remaining oil to cook tomato mix, add sambal base, salt, pepper, ginger, and lime juice. Add oil if needed. Cook until sauce becomes pasty. Add prawns back into the pan.
Serve with white rice, or sliced baguette.
