Indonesian Turmeric Rice (Nasi Kuning)

Ingredients:

  • 500g jasmine Rice.
  • 250cc water/chicken broth.
  • 150cc coconut milk.
  • 2tsp salt.
  • 1tbs lime juice.
  • 2 cloves minced garlic.
  • 2 cloves minced shallots.
  • Black pepper to taste.
  • 2 tbsp Turmeric base.

If you have a rice cooker, you can do this by adding rice and all other ingredients in a rice cooker. Cover and let it cooked. Stir a bit while cooking, then cover and continue cooking.

Otherwise, put rice, turmeric sauce, water and all other ingredients in a heavy saucepan. Cover and bring to the boil over moderate heat. Stir, lower heat to the minimum and cook until the rice is done.

Serve 4-6 people.
