Ingredients:
- 6 mini cucumbers (pickle cucumbers).
- 500g green beans, thinly sliced.
- 1tsp kosher salt (or to taste).
- 1 tbsp galangal sauce.
- 2 tsp sugar.
- 2 tbsp rice wine/white vinegar.
- 2tsp sesame oil.
- 2tsp soy sauce.
- 1tbsp oil.
- 2 large garlic cloves, minced.
- Red paper flakes to taste.
- Handful whole cilantro leaves.
- 2tsp toasted sesame seeds.
- 1 red/green jalapeno, sliced.
Inspired by Chinese “pai huang gua” , or smashed cucumber salad.
Lightly smash cucumber in mortar & pestle. Slice cucumber into bite size pieces.
Place cucumber, green beans and jalapeno in a bowl, toss with salt and sugar.
Add vinegar, sesame oil, soy sauce, and galangal sauce.
Drizzle oil, add garlic and red pepper flakes.
Garnish with cilantro leaves.
