Cucumber & Green bean Summer Salad


  • 6 mini cucumbers (pickle cucumbers).
  • 500g green beans, thinly sliced.
  • 1tsp kosher salt (or to taste).
  • 1 tbsp galangal sauce.
  • 2 tsp sugar.
  • 2 tbsp rice wine/white vinegar.
  • 2tsp sesame oil.
  • 2tsp soy sauce.
  • 1tbsp oil.
  • 2 large garlic cloves, minced.
  • Red paper flakes to taste.
  • Handful whole cilantro leaves.
  • 2tsp toasted sesame seeds.
  • 1 red/green jalapeno, sliced.

Inspired by Chinese “pai huang gua” , or smashed cucumber salad.

Lightly smash cucumber in mortar & pestle. Slice cucumber into bite size pieces.

Place cucumber, green beans and jalapeno in a bowl, toss with salt and sugar.

Add vinegar, sesame oil, soy sauce, and galangal sauce.

Drizzle oil, add garlic and red pepper flakes.

Garnish with cilantro leaves.
